He received mixed feedback from judge Jason Atherton, who praised the flavour of the dish but questioned its innovation.
Colin wowed judges last year with his 'Quail in the Woods' starter, and went on to win the grand final of the competition, which saw 24 of the finest chefs in the country battle in eight regional heats for the opportunity to create a four course Olympic menu.
The winning menu was then served at a prestigious event at the Old Royal Naval College in Greenwich, hosted by Sir Steve Redgrave.
He will appear on Great British Menu again this evening, at 7.30pm on BBC2. In tonight's show Colin will cook his fish course of cockles, mussels and salmon.

“They say you 'eat with your eyes', and it's all very pretty and arty-farty, but not very edifying. If I presented a working man with a meal like this, I would be wearing it.”
